Food Notes — al Covino

Al Covino is a very small, intimate restaurant in the Castello district, set in a beautiful and slightly hidden area. It lies along the route toward the Biennale, but remains outside the main tourist flows.
Food Notes — al Covino

The space feels immediately welcoming. It is run by a young married couple, Claudio and Claudia. Claudio, the chef, is from Naples. He worked for several years in well-known restaurants in Venice and has a background in French cooking. You can sense this right away: careful attention to ingredients, both from the sea and the land, and a sincere respect for tradition and technique.

The cooking manages to bring together north and south without forcing the point.
It is a precise idea, carried forward with care and professionalism, and a quiet sense of romance. The name of the restaurant often comes back to mind: Covino, something to be kept warm, protected, allowed to grow with patience. Even the space reflects this, with subtle egg-like shapes appearing here and there — not decorative, more instinctive.

The menu is clear and well thought out: three directions — sea, land, vegetarian — plus a chef’s tasting. Two courses and a dessert, priced in line with both the quality and the city. The wine list is carefully curated, with plenty of room given to local selections.

Desserts are perfect in their simplicity. They are prepared by Claudia, with close attention to tradition and a light personal touch. They don’t seek effect. They are good, coherent with the rest. Nothing feels out of place.

The dishes are visually restrained and technically solid.
The creamed salt cod is exceptionally smooth, melting on the palate.
The pasta e fagioli is a very successful variation, with mussels and Treviso radicchio — the best version I’ve ever had.

The service is perhaps slightly formal, but never intrusive. It is a place of high quality, with something quietly special about it.

At Covino, you can sense the dream of two people who met while working side by side in some of Venice’s most respected kitchens, fell in love, and decided to take it seriously.
